3 roma (plum) tomatoes, diced
3 tablespoons cilantro
3 tablespoons white vinegar

1 tablespoon sugar
1 teaspoon pepper
1 pinch salt

Directions

Combine the onion, tomatoes, including cilantro inside a non-metal bowl. Whisk together the vinegar, sugar, flavour including salt; pour above the onion mixture, including toss to coat. Cover including cool 2 to 4 hours. Drain right before serving.
