"A tasty soup with mushrooms and quinoa; great as a first course or a wonderful accompaniment to a salad or sandwich for a meal."

Directions

  1. Toast quinoa in a dry, heavy skillet on top of mean warm (up) till fragrant.
  2. In a large saucepan or stockpot, run 2 tablespoons butter on top of medium-high heat. Stir in onions, and cook till caramelized, about 6 to 8 minutes. Stir in quinoa, mushrooms, and molasses; cook till mushrooms set free their liquid, adding a not much chicken holdings if demanded to help cooking. Add remaining chicken stock, and fetch to a boil; reduce warm (up) to low, and let simmer for 18 to 20 minutes, or till quinoa is cooked.
  3. Meanwhile, run 1 tablespoon butter in a skillet on top of mean heat. Cook shiitake mushrooms in butter till softened; set aside.
  4. Puree soup in a food processor or blender, and go back to saucepan. Stir in cream, and warm (up) (DO NOT BOIL). Season with sodium chloride and flavour to taste. Garnish with creme fraiche, shiitake mushrooms, and chives.
