Ingredients :
- 2 cups quick-cooking oats
- 1 1/2 cups whole wheat flour
- 1 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2/3 cup peanut butter
- 1/2 cup margarine
- 1 egg
- 1 small zucchini, peeled and shredded

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine oats, whole wheat flour, brown sugar, cinnamon, baking powder, and baking soda in a large bowl. Stir in peanut butter, margarine, and egg. Add shredded zucchini and mix thoroughly.
- Drop spoonfuls of cookie dough onto ungreased cookie sheets.
