Ingredients :
- 1 tablespoon oil, or as needed
- 2 onions, finely chopped
- 2 (8 ounce) packages sliced fresh mushrooms
- 2 (14 ounce) cans butter beans, drained and liquid reserved
- 1 teaspoon dried tarragon, or to taste
- 1/4 cup unsweetened soy creamer, or more to taste

- Warm oil in a frying pan over medium heat. Add onions; cook and stir until soft, about 5 minutes. Add mushrooms and cook until soft, 6 to 8 minutes more. Add beans and reserved liquid, tarragon, and enough creamer to cover the beans. Bring to a simmer. Cook down until cream thickens, 8 to 10 minutes. Remove from heat and serve.
Notes :
- You can use fresh tarragon in place of the dried, if you like.
