Russian Chicken and Pineapple Salad

This popular Russian salad is often served for special occasions. I like to garnish the salad with pineapple rings, but you can use any kind of canned pineapple.

Ingredients :

• 1 (10 ounce) can pineapple slices, drained and chopped (reserve a few slices for garnish)
• ½ pound skinless smoked chicken breast, cubed
• 1 cup grated mature Cheddar cheese
• ¾ cup chopped walnuts
• 2 tablespoons sour cream
• 2 tablespoons mayonnaise
• 2 cloves garlic, minced (optional)
• salt and freshly ground black pepper to taste
