Sweet Potato Skillet

"Sweet potatoes are sauteed with bacon, apples, onion, and jalapeno peppers, then coated with ketchup, maple syrup, and Parmesan cheese, to make a sweet and savory side dish."

Ingredients :

• 2 slices bacon, cut into 1/2-inch pieces
• 1 small sweet potato, halved lengthwise and cut into 1/4-inch slices
• 1 Golden Delicious apple - unpeeled, cored, and cut into wedges
• 3 tablespoons chopped onion
• 1/2 jalapeno pepper, seeded and thinly sliced
• 2 tablespoons ketchup
• 1 tablespoon maple syrup
• 1/4 cup Parmesan cheese

Instructions :

• Heat bacon in a medium skillet over medium heat until it releases a little bit of grease, about 1 minute. Add sweet potato, apple, onion, and jalapeno pepper. Cover skillet and cook, uncovered, stirring every 2 minutes, for about 10 minutes. Add ketchup, maple syrup, and Parmesan cheese during the last minute of cooking and toss to coat.
