This is a no-seafood paella, flavored completely with chicken and smoked sausage. Ingredients :

- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 ½ cups medium-grain white rice
- 1 ½ teaspoons smoked paprika
- 1 ½ teaspoons ground turmeric
- 1 pinch cayenne pepper
- 1 pinch saffron (optional)
- ¼ cup dry sherry
- 2 ¾ cups chicken broth
- 1 (10 ounce) can diced tomatoes
