Janey's Vegetable Noodle Soup

Ingredients :

  • 3 cups water
  • 2 tablespoons olive oil
  • 1 (7 ounce) package fresh udon noodles
  • 1 cup hot vegetable broth
  • 1 large carrot, peeled and diced
  • 1 large green bell pepper, diced
  • 1/2 cup chopped celery
  • 1/4 cup soy sauce
  • 1/2 cup chopped green onions

Instructions :

Prep : 20M Cook : 2M Ready in : 30M
  • Bring water and olive oil to a boil in a pot over medium-high heat. Add noodles. Cook, stirring occasionally, until mostly tender, about 3 minutes. Add vegetable broth and carrot; cook and stir for 1 minute. Add green bell pepper, celery, and soy sauce; stir and bring to a boil for 1 minute more. Sprinkle green onions on top.

Notes :

  • Soba or ramen noodles can be used in place of the udon.
  • Use any color bell pepper of your choice.
  • Add a pinch of salt if using low-sodium soy sauce.
