"I just started a low-calorie, low-carb diet and hated having to cut out flour from my cooking. I decided to try and make vegan pancakes with protein powder instead and they actually turned out surprisingly delicious! You can use any flavor of protein powder too: I've tried vanilla, strawberry, and chocolate so far. Strawberry and chocolate have been my favorites! Tastes delicious with a hot cup of tea or coffee or even with a chilled glass of almond milk!"
Ingredients :
- 4 scoops vanilla protein powder
- 1 cup almond milk
- 1 teaspoon vanilla extract (optional)
- 2 (1 gram) packets stevia powder (optional)
- 1/2 teaspoon salt (optional)
- nonstick cooking spray
- 50 fresh blueberries
- 1/4 cup water

- Gradually add protein powder to almond milk in a medium bowl and whisk to combine. Add vanilla extract, stevia powder, and salt.
- Heat up a skillet over low heat and spray with nonstick spray. Pour in some batter in a round and let cook until set, about 2 minutes. Flip and cook for 2 minutes on the other side. Transfer to a plate. Repeat with remaining batter.
- Place blueberries and water in a mug. Heat in the microwave, stirring and mashing berries at 30-second intervals, until soft and syrupy, about 2 minutes total. Pour syrup over pancakes.
Notes :
- Substitute 5 chopped strawberries for the blueberries if preferred. Add some sweetener to the berry syrup if desired.
