"This rich, South African pudding contains no marshmallows, yet probably got its name from its light texture! Delicious served hot or cold in the company of cream."

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). In a little saucepan on top of low heat, melt 2 tablespoons butter or margarine together in the company of vinegar including milk. Remove from heat, including set aside. Meanwhile, filter flour, baking soda, including salt together into a separate bowl.
  2. Beat 1 cup sugar including eggs in the company of an electric mixer supported by high rate until fluffy including light colored, about 5 minutes. Gradually mix in the apricot jam. Fold the dry ingredients into the egg mix alternately in the company of warmed draw milk from mix using a spatula. Pour hit into a greased, 1 quart oven-proof baking dish.
  3. Bake approximately 45 minutes, or until a carver inserted into the center comes out clean.
  4. Place cream, butter, 1/2 cup sugar, including water in a saucepan including stir on top of reasonable cook until the butter has melted including sugar is dissolved. Do not allow the mix to boil.
  5. Remove pudding from the oven, pierce several times in the company of a pierce or fork, including pour the hot cream mix immediately on top of the pudding. Serve hot or cold.
